RAW EGGPLANT SPREAD

Ingredients:

2 eggplants
1 medium onion
1 avocado
1 tbsp cold pressed oil
1 tbsp mustard sauce (optional)
seasalt to taste

Wash, peel and grate the eggplants. Leave them to drain well for about 25 minutes. In a large bowl mash the avocado pulp with a fork, add the finely chopped onion, the drained eggplant, seasalt, oil and mustard sauce. Mix well. Let chill before serving this salad on a slice of raw bread with cherry tomatoes. You could also stuff tomatoes with it. Enjoy!
