1 medium onion/2 spring onions
1 red bell pepper
juice of 1 lemon
seasalt to taste
chopped parsley or coriander (optional)
Process onion and pepper and then put them in a bowl. Mash the avocado pulp with a fork and add to bowl. Add the coarsely chopped tomatoes, seasalt and fresh lemon juice. Stir and serve with tortilla chips (preferably raw tortilla chips!).
