YUMMY KALE AND SPINACH SALAD



Kale has done pretty well in my balcony garden so I harvested some and made a beautiful salad to celebrate my anniversary. I'm not gonna give you specific quantities for this salad, each of you can make it according to your taste.

Ingredients:
kale, spinach, avocado, tomato, cucumber, spring onion, lemon zest, pepper, Himalayan salt, olive oil, walnuts.

Tear the kale leaves into bite size pieces. Slice the tomatoes and cucumbers. Chop the spring onion. Dice the avocado. Coarsely chop the walnuts. Put all ingredients in a large bowl, toss and serve. Enjoy!

FRUIT SMOOTHIE


Ingredients:
1/2 cup hemp milk
1 handful sour cherries
1 banana

Remove the pits from the cherries. Blend all together and enjoy! It is gooooood!

HEMP MILK


I have never before drunk hemp milk so I was curious... and I made it! It is good!

Ingredients:
5 tsp hemp seeds
1 cup pure water

Put the ingredients in the blender and blend until white and smooth. You can take it through a sieve or a cheesecloth. You can also add fresh fruit and have o great shake. If you need it sweetened you can add raw honey or stevia extract.

4 MONTHS OF BEING A RAW VEGAN


Yesterday I celebrated the 4th month of being a raw vegan.

Maybe you can't see it in the photos (or can you?) but my scale (and not only mine!) says I lost 12 kgs (26.4 Lbs).

Ingredients:
2 ripe bananas
1 cup fresh or frozen blueberries
1 handful dark leafy greens (my option was kale!)
1 cup pure water

Blend and enjoy!

STRAWBERRY CRAZE SMOOTHIE


In the mood for some ripe strawberries? You've come to the right place (post)!

Ingredients:
1 1/2 cups fresh ripe strawberries
1 handful dark leafy greens (I put radish leaves)
1 tbsp goji berries
1 cup pure water

You know the rest! Blend, blend, blend...Enjoy!

ORANGEADE GREEN SMOOTHIE

Ingredients:
1 handful spinach
4-5 big oranges
1 cup pure water

If you have never had this smoothie, you can't imagine how good it is! It is even better than an orangeade! I don't have to tell you how to prepare it, do I? You know... blend, blend, blend...Enjoy!

CHOCOLATE RELOADED


Sooooo yummy was the raw chocolate I made before that I had to make another batch and share a photo of it!!!
I had a lot of guests lately and I chose to serve them with my newly discovered chocolate, and I must say that it had an amazing success!!!
This time I put Brazilian nuts, dried plums and coconut flakes. Here it is...

GARDEN UPDATE

TZATZIKI AND ALFALFA SPROUTS



Ingredients:
2 large cucumbers
1 1/2 cups nut yogurt
6 cloves garlic (or less)
Himalayan pink salt to taste
black pepper to taste
juice of 1 lemon
1 tbsp chopped coriander leaves (only if you like coriander!!!)
1 tbsp alfalfa sprouts

Peel your cucumbers if they are not organic, just wash if they are, grate them, add salt, mix and let sit. Crush and finely chop the garlic. After about 10 minutes drain the cucumbers, put them in a big bowl and add all other ingredients. Mix well and let chill for 30 minutes. Garnish with alfalfa sprouts.
Note: If you don't like the strong taste of garlic don't use 6 cloves but less.

SCALE DAY



A good piece of advice for those who want to lose weight: pick a day of the month (for example the 10th day of every month) to weigh and measure yourself and don't do it more often than that!
Weigh yourself in the morning on an empty stomach.

NOT RAW BUT LESS DAMAGING COFFEE


I used to be addicted to coffee before I started the raw food lifestyle and sometimes I miss it terribly so I bought cereal coffee. It is made out of roasted oats and rye and it has no caffeine so it is not a stimulent.
There are recipes for raw coffee on the internet but I haven't tried them yet. When I do I'll let you know! If any of you have a recipe for raw coffee which you have tried and liked please tell me!!!!

I WENT SHOPPING...


And I brought home a lot of raw organic goodies!
I have here some raw cashews, vanilla beans and whole wheat flour which I used to make my hubby some bread and it turned out great (I had to take a bite to see what I had created :)). In the middle some raw Nori sheets and nutritional yeast, and on the right, goji berries, bee pollen and Himalayan pink salt to replace my sea salt ( but salt is not good whatever kind of salt it is! but if you have to use salt, at least use the ones that are of good quality!).

RAW OILS


In my un-cooking I use (moderately I might say) palm oil and organic coconut oil, extra virgin olive oil, cold pressed sesame, soy, sunflower and flax seed oil. There are some more cold pressed oils I found but didn't buy (pumpkin seed, corn and hemp oil). For frying (for my hubby and guests) I use non-raw sunflower oil because raw oils are not good at high temperatures (that's why I keep them in the fridge, except for the coconut and palm oils, which I keep in my pantry). Unfortunately I cannot find organic raw cacao butter anywhere in my hometown... :(

NATURAL SWEETENERS


Here are some sweeteners from my kitchen! I use the raw ones and my hubby uses the rest. My hubby uses the stevia extract to sweeten his coffee every morning (hurray!! no more refined sugar for him for about 4 months now!!!) The brown sugar is a leftover from his transition from white sugar to stevia! The ones I use are dried fruits like dates and plums, raw honey, raw organic agave syrup, raw organic maple syrup and sometimes organic rice syrup (although I don't know if it's raw or not!). I also have some stevia powder which I made myself but forgot to include in the photo...
If you use different raw sweeteners please let me know!!!!!!!!!!!!!

RAW-LICIOUS CHOCOLATE


Ingredients:
3 tbsp coconut oil (or cacao butter)
3 tbsp agave syrup
2 tbsp raw honey
2 tbsp raw cacao powder
2 tbsp carob powder
1 vanilla bean
any kind of nuts and dried fruits for decoration

Melt the coconut oil: boil some water, put it in a big glass bowl, put the coconut oil in a smaller bowl and place it in the big bowl of warm water(don't let the water exceed the level of the small bowl!) and let it sit until the oil is melted. Then add all other ingredients and mix well with a spoon or spatula. Pour the chocolate into molds and garnish with nuts or dried fruits ( I used cashews, hazelnuts, goji berries and raisins). Let sit in the freezer for at least 1 hour then savour!
It was the first time I made raw chocolate and I didn't think it would come out sooooooo delicious! All my non-raw friends and family members loved it!

APPLE AND SPINACH GREEN SMOOTHIE


Ingredients:
3 big apples
1 handful spinach leaves
1 orange
1 cup water

Peel and cut the apples and the orange. Throw all ingredients in the blender and wait for the result: applelicious!

THE BEGGININGS OF MY BALCONY GARDEN







Here are some photos of how my garden looked like in the beginning:

COLIVA OR SPROUTED WHEAT DESSERT


Ingredients:
1 cup sprouted wheat
1/2 cup dates
1/4 cup raisins
1/4 cup walnuts
1 tsp vanilla extract
1 tsp cinnamon

Sprout the wheat.
Soak walnuts overnight. Soak dates and raisins for 20 minutes, drain (but don't discard the soaking water) and process into a paste. Add the cinnamon and vanilla and bit by bit almost half of the soaking water while processing. Rinse and drain the walnuts, add them to the paste and process only for a little while.
Put the sprouted wheat (rinsed and drained) into a bowl, add the paste and mix well. All done! You could also add in some carob or cacao to make it chocolaty. Enjoy!

GREEN SMOOTHIE YUM YUM


Ingredients:
1 ripe banana
1 cup raspberries
1 handful dandelions (or any other wild edible)
1 cup pure water

Blend, blend, blend... And remember: Chew and enjoy!

CARROT CAKE WITH CHOCOLATE MOUSSE



Ingredients for the base:
4 carrots
1 cup dried fruits (your choice)
2 tbsp walnuts
2 tbsp coconut flakes
cinnamon and nutmeg to taste

Ingredients for the mousse:
1 avocado
1 cup pitted dates
2 tbsp raw honey
4-5 tbsp carob or cacao
1 tsp vanilla extract

To make the base:
Soak the walnuts overnight. Rinse and drain, process them and then add the dried fruits (I used pears and dates) and process some more. Peel, wash and juice the carrots. Drink the juice to have energy for what’s to come :) Put the first composition into a bowl, add the carrot pulp, the coconut, the cinnamon and nutmeg and mix (with your hands). You can form mini round cakes like I did and put them in the fridge.

To make the chocolate mousse:
Soak the dates in water for about 20 minutes and process together with the honey and vanilla extract. Mash the avocado with a fork and add to the food processor. You don’t want to overprocess your avocado! Add the carob or cacao powder and process to a creamy consistency. If the mousse is too hard, add a little bit of the soaking water from the dates. Put the mousse over the carrot crust and sprinkle with coconut flakes. Yummmmm…

"FRENCH FRIES"

Ingredients:

1 turnip
seasalt and pepper to taste
pinch paprika
1 tbsp nutritional yeast

Wash, peel and cut the turnip into french fries sticks. Add all other ingredients and toss well. You can add onion or garlic powder, or a bit of cold pressed oil, too. Yummm...

MAGIC CELERY SOUP

Ingredients:

5 stalks celery
4 tomatoes
1 cucumber
1 bunch dill
1 onion spring
seasalt to taste
pinch cayenne pepper

Wash, peel and cut the veggies. Put all ingredients into the blender and say ABRACADABRA until the soup appears there. Then pour the soup into a bowl and use your magic wand (the spoon!) to do a magic trick and pufffff... it disappeared! (applause and the crowd goes encore! encore!...)

1 cup fresh or frozen raspberries
1/2 cup fresh or frozen mixed berries
1 ripe banana
1 tbsp goji berries
1 cup pure water

Blend until your blender hurts :) and enjoy!

GUACAMOLE


GUACAMOLE

Ingredients:

1 medium onion/2 spring onions
1 red bell pepper
1 avocado
2 tomatoes
juice of 1 lemon
seasalt to taste
chopped parsley or coriander (optional)

Process onion and pepper and then put them in a bowl. Mash the avocado pulp with a fork and add to bowl. Add the coarsely chopped tomatoes, seasalt and fresh lemon juice. Stir and serve with tortilla chips (preferably raw tortilla chips!).

RAW EGGPLANT SPREAD


RAW EGGPLANT SPREAD

Ingredients:

2 eggplants
1 medium onion
1 avocado
1 tbsp cold pressed oil
1 tbsp mustard sauce (optional)
seasalt to taste

Wash, peel and grate the eggplants. Leave them to drain well for about 25 minutes. In a large bowl mash the avocado pulp with a fork, add the finely chopped onion, the drained eggplant, seasalt, oil and mustard sauce. Mix well. Let chill before serving this salad on a slice of raw bread with cherry tomatoes. You could also stuff tomatoes with it. Enjoy!

CAULIFLOWER RICE


CAULIFLOWER RICE

Ingredients:

1 medium cauliflower
2-3 onion springs
3 tbsp olive oil
1 bunch chopped parsley
juice of 1 lemon
seasalt and oregano to taste

Wash and cut the cauliflower, process until it looks like rice (not too long!). Finely chop the onion and parsley. Mix all ingredients in a bowl and voila...RICE!!!

ZUCCHINI SPAGHETTI WITH MARINARA SAUCE


ZUCCHINI SPAGHETTI WITH MARINARA SAUCE

Ingredients:

1 zucchini
2-3 tomatoes
1 red bell pepper
1 small onion
1 cloves garlic
basil, parsley, oregano to taste
seasalt to taste
1 tbsp olive oil (optional)

Shred the zucchini to form "spaghetti" or if you have a spiralizer... Process all other ingredients into a sauce and pour over the zucchini. Serve fresh.

FRUIT CAKE/TART


FRUIT CAKE/TART

Ingredients for the crust:

1 cup walnuts
1/2 cup hazelnuts
1 cup almonds
1 cup dates
pinch of seasalt

Ingredients for the filling:

2 cup cashews
1 large pineapple
1 cup dates

Extras:

1 banana
1 kiwi
1 handful berries

Soak all nuts overnight. Then rinse and drain. Soak dates for 20 to 30 minutes and keep the soaking water. Process all crust ingredients to a chocolate bar consistency (if you squeeze it it should stay in place, if you break it in 2 it should come apart easily). Mold the crust into a cake/tart pan with your hands and let chill.
Rinse and drain the overnight soaked cashews and process together with the dates to a paste consistency. Peel and cut the pineapple, process it and then take it through a sieve to drain the juice. Process the cashews and the pineapple pulp and gradually add the juice. Do not add all the juice, it will be too runny. Decorate with slices of fresh fruit and pour over them a bit of the pineapple juice. Serve chilled.
